This Pho-Spiced Pumpkin Ramen has the comforting tastes of traditional Vietnamese pho with a pumpkin twist for fall. The bowl is warm and filling, making it perfect for cold nights or when you just want a comfort food.

Ingredients:

  • 1 small pumpkin, peeled and cubed
  • 4 cups vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp star anise
  • 1/2 tsp coriander seeds
  • 200g ramen noodles
  • 1 cup bok choy, chopped
  • 1/4 cup green onions, chopped
  • 1 red chili, thinly sliced optional
  • Sesame seeds for garnish
  • Fresh cilantro for garnish

Instructions:

Ginger, garlic, cinnamon, cloves, star anise, and coriander seeds should all be mixed together in a large pot with soy sauce, rice vinegar, and vegetable broth

Bring to a low boil

Put the cubed pumpkin in the pot and cook for 15 to 20 minutes, or until its soft

Follow the directions on the package to cook the ramen noodles while the pumpkin is cooking

Remove the water and set it aside

When the pumpkin is soft, blend it with an immersion blender or put it in a blender and blend it until it is smooth

Bring the mixed ingredients back to the pot and add the cooked ramen noodles and chopped bok choy

For another 5 minutes, let it cook slowly until the bok choy softens

Check the seasoning and make changes if needed

Put green onions, sliced chili, sesame seeds, and fresh cilantro on top of the hot ramen when you serve it
