Keto Cauliflower Soup

Indulge in a creamy, keto-friendly cauliflower soup thats both comforting and nourishing. Packed with flavor and nutrients, its the perfect dish for a post-Thanksgiving reset.

Ingredients:

  • 1 medium cauliflower, chopped
  • 1/2 cup unsweetened almond milk
  • 2 cups vegetable broth
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons nutritional yeast

Instructions:

In a large pot, heat olive oil over medium heat

Add minced garlic and saut until fragrant, about 1 minute

Add chopped cauliflower and cook for 5 minutes, stirring occasionally

Pour in vegetable broth and almond milk, and add dried thyme

Season with salt and pepper

Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until cauliflower is tender

Using an immersion blender or regular blender, blend the soup until smooth and creamy

Stir in nutritional yeast for a cheesy flavor

Serve hot, garnished with additional thyme if desired
