Easy Fajita Stuffed Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions:

Preheat oven to 375F 190C

In a skillet, heat olive oil over medium heat

Add bell pepper, onion, and garlic

Cook until softened, about 5 minutes

Stir in chili powder, cumin, paprika, salt, and pepper

Cook for another 2 minutes

Slice a pocket into each chicken breast

Stuff each chicken breast with the fajita mixture and mozzarella cheese

Secure the pockets with toothpicks if needed

Place stuffed chicken breasts in a baking dish

Bake for 25-30 minutes or until chicken is cooked through
