Pancetta Vodka Pasta
Ingredients:
- 300g pasta
- 150g pancetta, diced
- 1/2 cup vodka
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped for garnish
Instructions:
Follow the directions on the package to cook the pasta until it is al dente
Remove the water and set it aside
Warm up the olive oil in a big pan over medium-low heat
It will take about 5 minutes of cooking after adding the pancetta until it is crispy
Put red pepper flakes and minced garlic in the pan
After another minute, the food should smell good
Carefully add the vodka, and then let it cook for two to three minutes so that the alcohol can evaporate
Turn down the heat and add the heavy cream
Slowly cook for 5 to 7 minutes, until the sauce gets a little thicker
Toss the cooked pasta in the pan with the sauce until it is well covered
Add grated Parmesan cheese and stir it in until it melts and mixes into the sauce
To taste, add salt and black pepper
Serve hot with fresh parsley chopped on top
