Indian Zucchini Fritters

These Indian Zucchini Fritters, also known as Zucchini Pakora, are a delightful vegan and gluten-free snack or appetizer. They are made with grated zucchini and a blend of spices, then deep-fried to crispy perfection. Enjoy them with a tangy dipping sauce for an irresistible treat

Ingredients:

  • 2 medium zucchinis, grated
  • 1 cup chickpea flour
  • 1/4 cup rice flour
  • 1 small onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon baking soda
  • Salt to taste
  • Oil for frying

Instructions:

Grate zucchini, add rice flour, chickpea flour, chopped onion, chopped green chilies, cumin seeds, turmeric powder, coriander powder, baking soda, and salt to a bowl

Mix it well so that you get a thick batter

You can add water if the batter is too dry, but not too much

Put oil in a deep pan and heat it over medium-low heat

Drop a small amount of the batter into the hot oil very carefully

Do it again with more batter, but dont pack the pan too full

Turn the fritters over a few times while theyre cooking until they are golden brown and crispy on all sides

When the fritters are done, take them out of the oil and put them on a plate with paper towels on it to drain the extra oil

Serve hot with your favorite chutney or sauce to dip it in
