Paleo Stuffed Bell Peppers
These Paleo stuffed bell peppers are a delicious and healthy dinner option. They are packed with ground turkey and cauliflower rice, making them low-carb and Paleo-friendly.
Ingredients:
- 4 large bell peppers
- 1 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cauliflower rice
- 1 cup diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
Set the ovens temperature to 375F 190C
Remove the seeds and membranes from the bell peppers by cutting off the tops
Heat the olive oil in a big skillet over medium heat
Add the chopped garlic and onions, and saut until transparent
Cook the ground turkey until it turns brown
Add the diced tomatoes, oregano, basil, salt, and pepper, along with the cauliflower rice
Simmer until the mixture is well combined, 5 to 7 minutes
After packing the turkey mixture inside the bell peppers, put them in a baking dish
When the peppers are soft, bake them for 25 to 30 minutes with a foil cover on
After removing the foil, bake for a further five to ten minutes, or until the tops begin to brown slightly
Enjoy while hot
