Vegan Cheesy Cauliflower Casserole

Indulge in the creaminess of this vegan cheesy cauliflower casserole. The cashew-based cheese sauce adds richness and flavor, while the cauliflower provides a hearty base. This dish is perfect for a cozy night in or as a side dish for your favorite meal.

Ingredients:

  • 1 medium cauliflower, chopped into florets
  • 1 cup raw cashews, soaked overnight
  • 1 cup unsweetened almond milk
  • 3 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions:

Preheat oven to 375F 190C

Steam cauliflower florets until tender, about 7-8 minutes

In a blender, combine soaked cashews, almond milk, nutritional yeast, lemon juice, garlic, onion powder, turmeric powder, salt, and pepper

Blend until smooth and creamy

In a large bowl, mix together the steamed cauliflower and the cashew cheese sauce until cauliflower is evenly coated

Transfer the cauliflower mixture into a baking dish

In a small bowl, mix breadcrumbs with olive oil

Sprinkle the breadcrumb mixture evenly over the cauliflower

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the cheese sauce is bubbly

Serve hot and enjoy
