Tangerine and Tequila Marmalade
Ingredients:
- 12 tangerines, peeled and segmented
- 2 cups granulated sugar
- 1/4 cup tequila
- 1 lemon, juiced
- 1/2 teaspoon vanilla extract
Instructions:
In a large bowl, mix together the tangerine segments and granulated sugar
Allow the sugar to extract the tangerine juices by letting them macerate for an hour
Pour the tangerine mixture into a saucepan with a heavy bottom, then squeeze in the lemon juice and tequila
Mix thoroughly
Transfer the mixture to a boiling point by placing the saucepan over medium-high heat
Once boiling, lower the heat to a simmer for thirty to forty minutes, or until the consistency of the mixture reaches your desired thickness
Stir from time to time
After taking the saucepan off of the burner, add the vanilla extract and stir
Leaving a 1/4-inch headspace at the top of each jar, carefully pour the hot marmalade into the sterilized jars
Put the lids on the jars firmly
To make sure the sealed jars are properly sealed and preserved, process them in a boiling water bath for ten minutes
Let the marmalade cool fully before storing it in a dark, cool location
Savor your zesty and tantalizing Tangerine and Tequila Marmalade as a delicious condiment or on toast or pastries
